Domaine d'Escary is on a very stony, clayey limestone soil with excellent drainage.

The climate is Mediterranean, tempered by light sea breezes. The vines are cultivated with respect to their environment.

Vegetation is closely controlled which, combined with deep pruning, provides very low yields. Organic soil improvement agents stimulate the microbial richness of the soil and any treatments are made on a reasoned basis ensuring harvests of small grapes, shaped by nature.
