Harvesting is done by hand and bunches are selected on the basis of their maturity and strict health condition standards. The characteristics of each parcel - soil type, exposure, altitude, grape variety - are taken into account during wine making in order to ensure extraction of the best of the aromas, the finest tannins and the anthocyanins that give our wines their delightful colour.

Vinification is an alchemy-like process resulting from the combination of our skills and experience and consideration of the characteristics of every grape. This is why we vinify each grape variety separately before being able to move on to generous and complex blends with an added advantage of regularity between vintages and characteristics.

Part of our production is oak cask matured in casks made out of French oak. The wines undergo slow oxygenation for twelve to fourteen months in contact with the fine and dense grain of this wood, resulting in rounded wines with extreme finesse. A further consideration here is the way casks are burned inside before being used. This is a crucial factor in the final taste of the wine and the reason why we have chosen several different types of burning and also carry out regular tasting from each cask in order to create the best possible blends.
